    You want to drink it when it is in its prime of course.  And the better quality the wine, the longer it will last.  How to keep wine fresh?  Of course, you need to take precautions to preserve it.  Different techniques to do this are:

    Gas-Injection  –

    • This is a quick and simple way to keep your wine fresh after opening.  It works for Red and White wines.  

     

    Vacuuming

    • Remove air from your wine bottle to keep the wine tasting new. Suitable for all Red and White Wines.
    • Just insert the universal wine stopper into the bottle and pump until you hear the patented “Click”. The “Click” signals an airtight seal!  This one is my personal favorite for home use.

    The thing to remember is that once you have opened that wonder bottle of California Wine, oxygen is introduced and absorbed into the wine.  It is not the space above the wine that makes the wine start to oxidize, it is the oxygen that is absorbed into the wine when it is opened.  Oxidization is what will ruin your wine.  That is why it is sealed tightly when bottled and it is necessary to store it properly.

    How long does white wine last after opening? If you are opening a good quality Chardonnay, Reisling, or Sauvignon Blanc, these wines will last a little longer when the bottle is open – three to four days.  Sometimes more if stored in the fridge.  It

    might lose a little of its aroma, but it will still taste fine.  Lesser quality (mass-produced) wines are safer to consume in two days.

    How Long Can You Keep Red Wine?

    When opening a good quality red wine, such as a Cabernet Sauvignon, Zinfandel, or Barbera you will still be safe for three to four days.  How long does red wine last once opened? The more robust your wine, the more tannin it has the better protected it is from oxygen.  This means the denser your red wine is, the longer you can store the opened bottle.  For your lighter reds, I would shorten that time a bit to two days.

    Sparkling wines are a little easier to store, but you have to be very careful, as if not stored properly, they can go flat fast.  Use a proper sparkling wine stopper that firmly clamps to keep the bottle shut.  If this is put on the bottle properly, and you have most of the bottle left, you can store it for three to four days.  If you have only half a bottle left or less, one to two days is the maximum.  The storage also depends on how full the bottle still is.  And remember, every time you open it, it will lose pressure.  Losing pressure loses bubbles.

    Your California Ports will last longer than your wines.  Again, the quality of the port will make a difference, but port tends to last longer, which is a good thing when you usually don’t consume as much at a time as you would your regular wines.  Most good-quality ports will last a week or so.  Again, proper storage – sealing to protect from oxidation – will make the difference.  Also, keep your bottle lightly chilled to help extend the life of the wine.
